MAKER'S CHOICE
Wild Garlic Recipe
It’s everywhere right now, and there’s something magical about the world suddenly sprouting with a punchy, delicious flavour that’s totally free (if you know where to look). You’ll find wild garlic carpeting woodland floors and shady riverbanks - just follow your nose, the scent is your biggest clue! (Tip: Take a plant ID app or Google guide if you’re unsure.)
Our maker, Helen, shares her go-to recipe:
650g frozen butternut squash
300ml vegetable stock
300g wholemeal pasta
200g frozen spinach
100g crème fraîche
50g cheddar cheese
50g Parmesan cheese
Handful of Wild Garlic leaves
Garnish with wild garlic flowers
Method:
1. Add the frozen squash cubes in a large saucepan with stock and bring to boil. Simmer for 15 minutes until squash is tender.
2. Cook the pasta until nearly cooked with a little bite. Tip in the spinach and cook for a further 1-2 minutes.
3. Using a potato masher, mash the cooked squash to form a puree. It doesn't have to be smooth. Stir in the crème fraîche and grated cheeses to make a smooth sauce.
4. Mix sauce with the pasta until evenly coated, season with fresh garlic leaves and garnish with garlic flowers. Enjoy!
