Rachel’s Revitalising Ramen Recipe
January is the time we want food that’s simultaneously hearty & nourishing and healthy & fresh. Enter ramen; Rich, flavourful broth, comforting noodles, and your favourite toppings make it endlessly adaptable;
Ingredients:
2 garlic cloves, crushed
A solid amount of grated ginger
1½ tbsp white miso paste
1 tbsp tahini or peanut butter
15g dried shiitake mushrooms
1L good-quality vegan stock
2–3 tbsp soy sauce
100g ramen or rice noodles
Toppings: whatever you like! Some of my favourites are soft-boiled egg, tofu, pak choi, tenderstem broccoli, spinach, mangetout, sweetcorns, sesame seeds, sriracha, lime, coriander, peanuts (you get the idea).
Fry the garlic, ginger and spring onions (white bits) for a few mins, then add the miso, tahini, mushrooms, stock, and soy sauce and simmer for 15 minutes or so. Cook noodles slightly underdone, then drain and toss with a little water. Prepare your toppings however you like them! Divide noodles between bowls, ladle over the broth, and top with your chosen garnishes.
